I've done a few partial mash stovetop extract brews, but I've managed to borrow a gas burner, 50L pot, and basket to go in the pot.

I would like to do my first BIAB, but I'd like something at least 6% ABV. I LOVE IPAs especially, and I also really like a good porter. Basically the only styles I don't like are sours or really weak tasting pilsners. I want something simple where my mistakes aren't going to bite me too bad.

Also a Duvel clone https://thebrewhouse.co.nz/beer/duvel-clone-1 but this looks complex with the multi step mash. I guess I could pull this off though if I increase the temperature during the mash.

Or maybe some kind of doppelbock...

Suggestions? Would something really hoppy hide my mistakes somewhat?
 
Don't worry too much about hiding mistakes, just don't make them.:) Darker beers have flavor that hide any minor mistakes.

If you have your own mill don't worry about getting a recipe for a 6% beer, Get one for a 5% beer and let the extra fine crush your BIAB can deal with push your mash efficiency higher than projected. My first BIAB from a 5% beer recipe got me 7% ABV because I don't have a local supply store and bought a Corona mill and set it tight. They are so cheap that there is no reason not to have one if you don't already have a mill.

I'd recommend you do a few single rest temp mashes before you try to do a multi-step mash. Learn the basic process before you try to get more complex.

I second the recommendation to get a mill. Fine crush really helps your efficiency with BIAB.
