I'm very new to cider brewing, in fact this is my first real batch. I've got a 6 gallon pale of pule apple juice. I used Campden tablets but I haven't pitched the yeast. Not its been a few days since I put it in the pale and it looks like there is a little bit of mold developing on the top. Any advice? Should I pitch the yeast? Should scrap it?

Have you put your yeast in yet, did you dissolve the camden tabs really really well? Is it cold or warm? Did you loose the lid? get movin. WVMJ

I haven't put the yeast in yet, should I? I thought I dissolved them well. Its room temperature. The lid is a little loose, but it can seal pretty well.

looks like an infection. Ciders get infected very easily. Not sure why you waited a few days before pitching yeast. The best way to keep it from getting infected is to get fermentation going. The longer it sits without yeast, the better chance it will be infected. Pitch the yeast AS SOON as you put the juice in the pail.

FYI i have been brewing for 4 years and have done a lot of beer and a lot of ciders. I have never had an infected beer. But, my ciders have come out around 40% infected. Its really easy to get one, especially in a bucket. Best results are to use a glass fermenter and pitch yeast asap. When i am doing a cider, i also have a bowl of star san next to me and am constantly soaking my hands and anything else in it. Keep everything very sanatized

I don't know why I waited either. I guess I got busy and forgot. Is it too late? Should I just toss it and start with new juice?
