How do you adequately clean them prior to grilling?
i can 't stomach the concept of eating a part of an animal a large function of which is to detoxify it.. just doesn't seem right.. i'll eat most other parts though (haven't tried heart, though i "may" be open to it)

Of course this is a bit hippy dippy since I get my meats from grocery stores and butchers, but what can you do.
Balogna and hot dogs and your inner hippy is once again dippy with teh world.
Your average farm animal, I would assume, has a pretty steady diet, with few toxins to filter...
You bring up a good point, but arent there animals slaughtered with the sole intention of them becoming lunch meats?
IIRC, thistle is pretty common in fields and is a toxic delicacy for cows.
Controlled by pesticides.
See a pattern?
In any event, it has been proven time and again that nothing harmful can exist in the presence of bacon. For this reason, I suggest wrapping your chicken livers in bacon, and you will be all set.
Or bell or a sweet pepper instead of celery.
Yknow what I should do next time. Make this exactly the same way, and then stuff a pepper with it and roast the whole device.![]()
Maybe with a simple tomato sauce. Don't tell my grandmother (RIP grandma) but tomato sauce and adobo together go nicely!
Grandma was Sicilian. There are RULES, you see, when it comes to tomatoes, and violating them with Greek olive oil or Spanish Adobo are clear violations.

There is this little place in Joplin, MO that makes delicious tacos de lengua. Initially I thought "No way am I eating something's tongue.", but they are phenomenal. I'm reluctant to try it anywhere else though as I'm worried that the rest won't be as good.
Cabeza you just think "mmmm crispy pig meat. me gusta"
