I've heard of people using two strains of yeast for one beer. Is there a website that explains which yeast can be mixed without one overtaking the other during fermentation? I would like to use an American ale yeast with a champagne yeast to create an extra dry ipa.
 
what you can also do is to pitch the champagne yeast after the ale yeast has done as much as it is going to do.

There are also other ways of making a beer dry. You can mash low or use a large amount of simple sugars in your recipe. These two things can really dry out your beer.

Pitch equal amounts. It's pretty easy, actually.
