So was brewing a nice big Belgium tonight BIAB style and missed my OG by 0.014... Got a bit ticked off at myself and then remembered the advice on this forum. I promptly reached into the fridge and poped the top of a fantastic Hefe homebrew that is just hitting its stride and relaxed.

The Belgium I brewed tonight is going to be great. Cheers to that superb advice.
 
You can always boil some DME and add it during primary.

But I know exactly how you feel. Hopefully you feel better once you take a sample before bottling/kegging.
 
Thanks for the advice on adding DME, I woke up this morning and good thing I put on a blow off tube instead of an airlock. The yeasties do not want to stay in their new home, but explore the world.

How far along in the fermentation process is too late for the gravity boost?
 
I would suggest adding it sooner rather than later. High krausen would be the best time to add it, in my opinion, as that's when the yeast is more active and more likely to readily consume the extra sugars.

Yeah full boil, working with a brand new pot and over estimated the boil off amount. Either that or I dumped one extra gallon of water in by accident.

Had my 4 year old brewsisstant helping me and we were having a good time.

When I back calculate it is exactly one extra gallon throwing the numbers out.
 
my last 2 batches have been under 5 gallons because it is so dry up here in Alaska during the winter.

I really need to work on my boil off calculations

really though, those couple of beers dont mean a thing and I dont worry about it.
