Making sure I get the right thermometer

I have a 15.5 gallon converted keg-kettle (known as a Keggle but my girlfriend laughs at this name) that I'd like to be able to get more accurate temperature readings with. I'm on the DIY kick trying to pinch pennies at every turn, so here is what I have so far:

1. The Thermometer I am considering from PexSupply.com. There is also this cheaper Thermometer from Amazon.com.

2. Weldless thermometer install kit from BargainFittings.

3. I got my Step drill bits from Amazon, get free shipping with Prime.

This information has been compiled from previous reddit.com/r/homebrewing posts and a couple hours of online shopping. Any advice from folks who have done this sort of surgery before would be followed carefully and greatly appreciated.

One thing I am unclear about is the length of the 'probe' on the MPT thermometers. Will I need to get some sort of extension to get an accurate reading?

What type of a chiller are you using? A thermometer with a 2 1/2" probe should not get in the way of an immersion chiller. If you are using a plate chiller or a counter flow chiller go with the longer probe. The longer the probe the more accurate your temp reading will be.
