A year and a half ago I had some apple juice left and no more empty fermentation vessel. So I filled a few 1.5 liter PET bottles with it and stored them in the fridge. No yeast added. Every so often I have unscrewed the lids just enough to let off the CO2. Yesterday I finished the last one. It was still fermenting and had considerable amount of sugar left in it. It tasted great.
Just wanted to share. This may have been covered before but my search did not bring up a relevant thread.
