How should a Maibock look/taste when it's done? I used the Elementary Penguin Maibock recipe in the Complete Joy of Homebrewing, but I had to make some changes, the largest of which are (1) the recipe called for 9.9 pounds of John Bull Light Malt Extract syrup, and I used 9 pounds of Coopers Light Malt Extract syrup. To make up for the loss in syrup, I used a whole pound of CaraRed grain instead of the 1/2 pound of malt that the recipe calls for (it doesn't actually say what type to use). Did I just create a frankenbrew?
