Last night was the first time I've tried racking from my 5 gallon carboy to several 1 gallon carboys. Turned out to be tricky, especially since I did not sufficiently raise the 5 gallon carboy high enough to accommodate the the long racking hose. SO, particularly in one of the gallon carboys, a lot of air bubbles were coming through, bubbling the cider as it transferred in. Any cause for concern here?

I came to realize - looking through threads tis morning - that I've got too much headspace in 2 of the jugs as well. Off to the store for some top off juice :/

Two more things to add: Should I have done 24 hours with the campden tablets before racking?? And I figured I would share I'm going to try to make a caramel cinnamon simple syrup to top of the 2 jugs instead of refill with juice (too lazy to go to store).

I think I understand your comments.. What kind of racking cane are you using? If an auto siphon, there may be a leak. If a standard siphon, consider that despite no bubbles happening in the airlock doesn't mean there isn't dissolved gas in the cider. When agitated that gas can come out of solution as... bubbles.

Re Campden tablets, my LHBS recommends it.

Sorry if I was unclear. Yes I was using an auto-siphon. As a result of stopping and starting of the siphon between the jugs, and a long looping line, I got a bunch of air in the hose.....the result of which was that air being pumped in and through the cider being racked into the secondary. Each bubbling noise made me cringe as I am only used to making beer (this is my first cider) and know you don't want that sounds happening.

And I did not use the campden tablets before transferring. The cider had been in the primary for 2 weeks though, so hope that is not an issue.

How much headspace should be a the top of a demijohn on first fermentation and then in bottle for second? Scared now :/

Scooby if there is no crack in your line it was probably co2 bubbles coming out of solution. Xenophon in primary headspace doesn't matter. In secondary as little as possible with more than an inch causing concerns.
