So I removed my white labs yeast from the fridge about 3 hours ago, thinking I'd be ready to pitch by now. My wort is still cooling. What should I do with the yeast? Keep it out it put back in fridge?

Thanks
Danno

Leave it at room temp. No problem. Ideally, the yeast is the same temp as the wort when you pitch it. It will be fine at room temp for months. The idea of refrigerating yeast is to slow down its metabolic processes in order to delay it from consuming itself (lysis), but you've got to have some pretty old yeast (at least 6 months) for that to happen.
