Turned out infinitely better than I thought. There was a bit of pork flavour coming in + a little booze from the spirit + ginger, citrus sourness and rosemary.

All in all, what I thought would be a trainwreck, is a legit good cocktail.

I would like to see this video. I have no idea what a fat wash for spirits even is. Sounds.... Interesting
 
As has been tradition for three years now, I'm opening my birthday bottling 3G OG from 11/27/2013. Cork popped off when I removed the cage and there was a slight gush but it calmed down quickly. Nose is full of grass and hay while the taste is decidedly tart and sharp. No major acidity or anything, and it's quite lively all around with way less funk than I had expected. On the back end there is also some breadiness. Here's to another 23 years of seeing how this thing progresses!

Finally cracked my first Lindeman's BlossomGueuze on Thanksgiving Evening, and I already want more. That beer really surprised me. Can anyone chime in with comparisons to Mamouche? I'm thinking about putting up a FT: Fou Foune ISO: Mamouche, just from how impressed I was with BlossomGueuze...
Did this taste like pickles? If not, it doesn't taste like Mamouche.

Whatever vintage JP had at Zwanze Day reminded my of sweet green bell pepper and funky lambic.

That's funny you say that, because I had a couple chances to try Mamouche before, but passed because the people next to me were saying how it tasted like Jalapenos/Pickles. I always opted for different Cantillon instead.

With BlossomGueuze, I got a faint fruitiness that I couldn't put my finger on, and the grassy, floral character from the Elderflowers cut through some of the acidity. I really enjoyed it. Need to make another Etre order now after telling myself no more for a while...

Thats exactly what I've been getting. That and a flowery note, with some faint wild honey, which goes perfectly well with the peppers. Glad they brought it back from its hiatus.

I had them the same day and thought they were both excellent. Gave the slight edge to Lindeman's though, I feel like it was drier and the pepper flavor was less pronounced and instead had some fruitiness to it.

Just opened a 2014 Intense Red 375. Very relaxed carb - not Doesjel-esque but more like a pale ale or something - and all the better for it. This feels a bit wrong to say but I almost like this better than the 2013 LPK? (And I can drink this at home)
 
Mamouche might be my favorite Cantillon. IMO, it needs to decant for 45 minutes but after that it is amazing.

Agreed, it and Iris are probably my two favorite Cantillon beers. Had it alongside Blossomgeuze a few months ago and much preferred Mamouche, but decanted Mamouche 30-45 mins before serving (which makes a huge difference in my experience).

Add the Rosé de Gambrinus and there's nothing left to desire. Maybe its just me, but the last vintages of Rose have been incredbly good, at Quintessence it stole the show, compared to many of the higher anticipated beers.

Agree. RdG has just gotten better and better since at least '13. And it was a 5-star beer to begin with.
 
Was Hommage 2015 ever distributed in the US? Or was it ever sold anywhere else than at the brewery?

lambic.info seems to state that batch 3 (2015) was only available at the brewery (https://www.lambic.info/3_Fonteinen_Hommage), but the 2015 bottle I got most likely seems not to have come from the brewery... (I got it this summer from a friend, and it was bought through the regular private import **** system that we have to deal with here, from what I've understood)

Was talking with a friend of mine about this and he's claiming it was brewery only, so I'm pretty puzzled. Perhaps it was only released at the brewery in December 2015th then was somewhat distributed at some point in 2016?

People with 2015 bottles in hand, how did you get them?
