Hey guys, I don't remember the specifics on OGV. Is it just regular oude gueuze that he holds back for a longer time or is it a blend of older lambic?
I have a few on the way and I'm curious for more info about it
They are barrels that Armand picks that he thinks will specifically age well.
I agree, oxygen at the start of fermentation is a good thing, but at this point, I think it could only be detrimental. And yes, brett does function in an aerobic environment, which that might help prevent some cardboard flavors, but at the cost of increased production of acetic acid.
Personally, I would take my chances with over-carbed gueze if the alternative was oxidized or overly acetic gueze, but maybe that option was unsafe. Also, I'm sure they took every precaution they could to prevent introduction of additional oxygen.
Has any other brewer done something similar to this and released the beer before?
EDIT: I guess Armand'Spirit is the closest thing I could think of. But still, I would imagine that opening bottles of over-carbed beer and putting it back in tanks or barrels is pretty much a brewer's nightmare in terms of both the amount of work it takes and quality control.
Just picked up a bottle of De Troch Cuvee Chapeau. The date on the back of the bottle says 03/12/14..can anyone tell me how old this bottle may be? It may be terrible, but for 7$, I couldn't pass it up!

What price do you guys see tilquin geueze and tilquin quetsche for normally? I was at a place yesterday that had tons of 375/750s of both for the 2013-2014 batch right on the shelves. Didnt buy much cuz I wasnt sure if it was worth pulling the trigger
Geueze was 11.99/22.99 and quetsche was 15.99/28.99. Why is the quetsche THAT much more? I havent seen them on shelves before, was excited to see them but those prices are roughRegular around me is 9.99/19.99.

Damn man, that is rough. I had an older version of the Quetsche one, and loved it, so I might be going back and pulling the trigger on a couple 750s of it.You think that's rough? I haven't seen Quetsche for less than $36/750 here in Boston. Regular geueze is more reasonable though at $20-25.00 per 750.
Drank one this weekend #forscience. My immediate reaction:

I posted this a while ago but after drinking another one last night it is worth repeating. The 2013/2014 tilquin Geuze is phenomenal. The past two years were a little watery to me when they were young but this batch is strong right out of the gate.
Can anyone explain this to me? https://untappd.com/b/brasserie-cantillon-jean-chris-nomad-2014/709496
As far as I can tell all of those check-ins but the first are for the 2013 version which was brewed by some French brewery and is definitely not lambic. Is Cantillon brewing the 2014 version and that first guy just got a sneak peek, or is he confused too?
Also, if anyone other than callmemickey has a cache of good Cantillon label images for some of these one-offs, I'd appreciate it if they could pass it alone. Preferably 500x500 as that's apparently what Untappd wants now (used to just be 200x200). I can post a full list of the ones without artwork tomorrow.
Most other lambic breweries have readily available labels, it's just friggin' Cantillon with a million one-offs.
I wouldn't pay that.So a store in Grand Rapids (Int'l Beverage) just posted that they have De Cam Oude Lambiek, $50 ea. Claim that only 6 cases made it into Michigan. Is it worth it?
