Decided to “treat myself”! Cork let go with a thump, one of those self removing ones ;) Tasting great, lots of lemon and citrus up front. The overall flavor profile just feels super intergrated where sharp edges are replaced with complementing flavors...

So I guess the Pinot Noir distributing now is the same b2 and not a b3 as I had assumed? Interesting...
 
Maybe the one I just bought was held back for release and b3 hasn't arrived yet? Anyone bought a newer bottle date Noir than 12/2016?
 
What are peoples thought son how bad temperature fluctuation is for lambic (particularly gueuze)? I am always concerned about buying them from somewhere refrigerated and then aging, or me deciding I think I'll drink one in the coming weeks, putting in the fridge, and then deciding to put it back in the cellar. Any thoughts would be appreciated.. yes, I recognize neither of these options are likely ideal- but, can it completely ruin much

About 7 years ago, I read an article where Dan Carey was asked about temperature fluctuations with packaged beer. It wasn’t specific to lambic but he basically said it doesn’t matter. Room temperature to fridge temperature and back again doesn’t have any measurable effects. Obviously really high temps are bad. Long term storage temps are more of your concern.

Repeated large fluctuations over long time periods have been shown to be bad for other forms of alcohol, but unless you're storing it outside for a few years the only negative effects would be if you let it spend a lot of time hot or slushy cold (or let it get SUPER hot or actually frozen for any length) during the fluctuations. One swap to fridge and back to cellar should have basically no effect.
