i am planning on doing a kolsch ale very soon, i have my ingridents but wanted some advice on the hop additions, is the 10 minute additon nesseary, if i do not use it would it bee more like a helles?
6 lbs Pilsner DME
1 oz Tettnang 60 minutes
1 ox Tettnang 10 minutes
WLP 029
 
the 10 minute addition is for flavor and aroma. kolsch yeast will accentuate hop and malt flavors like a other clean ale yeasts will. that late addition is most likely for a bit of lemon or spice flavor.
 
You don't need the 10 min addition, but having it in there certainly isn't out of style. I usually go with a late noble addition at 10 mins. It helps to add another layer of flavor in my opinion.
