How do you use it?

You put a couple drops in a small sample of wort. If if turns black, you didn't get a good conversion. If it doesn't change color at all (other than the color the iodine contributes) you're good to go.

This works, but because the iodine is checking for starch, you should not put your sample on a paper plate, which has starch in it. You will never get the reading your looking for because the iodine will react with the starch in the plate. Use something else. This was a tip given some time back on Basic Brewing Radio.

I use idofphor for starch conversion too. One thing I might add is you are testing the liquid only so make sure there are no bits or grain in your test portion. Any bits of grain will turn black possibly giving you a false reading.

If you want to know what to look for, do a small test with a mix of cold water + corn starch, adding iodophor. It'll become obvious.

Or put a drop on a slice of potato.
