I am going to brew up an IPA tomorrow. Originally I was going to use White Labs California WLP001 yeast. I harvested some Pacman yeast, so now I am thinking about using that for my IPA instead. Here are the particulars:

OG: 1.067
IBU's 66.8
SRM 10.4

With the pacman the final gravity is estimated to be 1.017
With the california yest the final gravity is estimated to be 1.015

Does anyone have experience making an ipa with both of these yeasts, and have a preference of one over the other. I do ferment in my basement (northeast) so my fermentation temperatures are in the low 60's which I think gives the pacman an advantage.

I've used both in my IPAs, and if anything the pacman is more attenuative than the WLP001, so I doubt that your projected FG is correct with the pacman. I think mine went from about 1.070 to 1.007 or so! I don't think you'll notice any difference in the final products. They are both clean, neutral, well attenuating ale yeast strains.
