I made a extract Tripel (Midwest Supplies kit) and it's been in primary a month now. I took a taste and a gravity reading it seems like it's going to be good but it's got such a lite flavor that the 8% alcohol is coming through a good bit.
I know you can leave beer in primary for a good long while without any ill effects, but I'm wondering if at this point will it make any detectable difference to age it in the fermenting bucket for another month vs bottling now and aging in the bottles? Obviously I still plan on having it in the bottles for at least a month or two before I try one (and I'll be saving a few for a year or two as well) but I'm just trying to figure out if leaving it in the bucket longer has any advantage.
