How long before bottling?

I have 3 gallon of cider-apple wine that I fermented out and racked into clean jugs last weekend. They have airlocks on them now and the water level in both chambers has been staying even.
How long should I wait (from a safety stand point) until I bottle some in wine bottles?
The recipe was 1 gallon cider and 2 cups of brown sugar plus some spices.

Also how long do you think these will store?

I have the stuff to stabilize, but I'd like to keep it simple if possible.
 
Airlock activity doesn't mean much. A hydrometer reading will tell you if the ferment is finished. If you're not going to carbonate, then all you need is potassium metabisulfite (1 crushed Campden tablet per gallon). That will stabilize your cider and prevent any bacteria from taking hold and also keep oxygen from spoiling it. If the ferment is in fact done, you can bottle it and it'll store for a long time.

Post what yeast you used and the current gravity reading.
