Hi all, I've been brewing with extract for about six months and just completed my first all-grain this past weekend. This site is a GREAT help. I selected what looked to be the simplest (and least expensive) recipe to start and am reading more about the science of mashing. My target gravity was 1.045, and I was really surprised that I was able to stay at temperature for the hour and succeeded in reaching OG 1.042. I really thought I'd screw it, hence the cheap recipe. I pitched Wyeast 1272 at 70 degrees 48 hours ago, but can't see any activity. If I see nothing tomorrow before leaving for work, I plan to pitch a packet of Nottingham and hope for the best.
