I'm trying to do a simple Hefe that I plan to ferment high (around 68*) to get that banana flavor but I still want to add a little bit of spice. I am thinking that can be done by using some "spicy" hops. Here's what I am thinking.

Grain Bill
5lb Pale Malt (2 Row)
5lb Wheat Malt
.5lb Rice Hulls

Hop Schedule
.25oz Sterling @ 50min
1oz Liberty @ 10 or 5 min (haven't decided yet)

Yeast
Wyeast #3068

Any input will be greatly appreciated.

Thanks!

Liberty wouldn't be bad, but consider going with Tettnang. They work really well to give that spicy taste, and work great in weissbier. Late additions aren't traditional, but a 1 oz addition would be an interesting little experiment. My two cents.

I was thinking it could be a fun experiment. That was another hop I was considering. I just don't have much first hand experience with either and the hop descriptions I can find leave a bit to be desired.
