For 5 gallons:
Extracts
3.5lbs pale malt extract
3.5lbs wheat extract
Grains
3/4 lb Colorado wheat
1/4 lb dark wheat
1/4 lb Belgian wheat
1/4 lb flaked wheat
Hops
1oz Perle
Yeast
WLP 300 Hefeweizen
My tested og 1.082 @ 64.3F
1. Heated 2.5 gallons of water to 120F. Added grains.
2. Slowly brought water temperature to 154F over the course of 20 minutes. Held at 154F for 40 minutes.
3. "Sparged" grain sack with 1/4 gallon of 154F water while sack was in a strainer.
4. Removed grain sack, brought to boil.
5. After boil, removed from heat, added extract, returned to heat, returned to boil.
6. 60 minute boil. Added 3/4oz of Perle at boil. Added 1/4oz of Perle w/ 20 minutes left to go.
7. After 60 minutes boil, used chiller plate to bring wort temp to 70F. Ran gravity test and it came out to 1.081F at 70F. This was far higher than I expected. Re-tested 1 and 2 hours later, came out with 1.082 at 64.3F.
8. Pitched WLP300 Hefeweizen.
Will be interesting to see what it comes out like. I really enjoy haystack wheat.
