As I have looked at some of the recipes on here and elsewhere I'm beginning to wonder if my grain bill is a little light. Here is the recipe I am using for a 5 gallon batch.


4 lbs. Two Row Wheat
4 lbs. White Wheat
4 oz. Munich Wheat
4 oz. Carmel 20
1.5 oz. German Hallertau pellets 4.7% AA

Mash @ 153 in 3 gallons of water and sparge with 4.75 gallons

Danstar Munich Wheat Beer Yeast (Dry)

Any thoughts?
 
Depending on your mash efficiency, this will come out on the lighter gravity end, but will work. I don't have my software in front if me, but assuming 75% efficiency and 5 gallons at the end of boil, this will give you something like 1.040-1.045 OG.

However, I don't think you want more than 50% of your grain bill to be wheat. Perhaps by "two row wheat" you mean two row barley (like US pale malt)?

Edit: also- how long are you boiling the hops?
 
Update on ingredients: White Wheat malt and Two Row Brewers malt. Hops: 1 oz @ 60 min and .5 oz @ 1 min.
