Is it ok to use my lemon ginger homemade kombucha to start a scoby? I'm not worried about the flavor coming through.
 
In my experience as a commercial kombucha brewer, the SCOBY requires unflavored black and /or green tea, organic, unbleached sugar, and filtered water, and about 10% acidic starter, usually from an unflavored plain kombucha. Some people use apple cider vinegar.
