Hi everyone,

I've been brewing AG, BIAB for 2 years now.

I brewed up my first saison probably 4 or 5 weeks ago now.

OG: 1.062
FG: 1.008 (est.)
7.25% ABV

9lbs of Pilsner
1lbs of Munich 9L
4 oz of Crystal 45L (for colour)
8 oz of Corn sugar (flameout)

90min boil

2 oz Saaz (60 min)
1 oz Saaz (5 min)

Pitched Wyeast 3724 @ 75F (left alone at ambient for 2 weeks)
Fermented in a 8 Gal bucket, no airlock, just a lid with an open seal

I didn't measure gravity, most of my ferments are done in less than a week and I guess I'm getting lazy.

I cold crashed, kegged it up and tested the gravity just to see how dry it had gotten...1.030 :smack:


Read up a bit more on the yeast, yada yada 80-90F...blah blah


Racked to a new fermenter, warmed it to 90F, repitched some slurry and let it ride for another week...haven't seen any activty...1.030


Pitched some US-05 I had saved in the fridge and waited another week...same thing, no visable activty...1.030


I've now made one last ditch effort to finish this off, 5g rehydrated EC-1118.


Nothing for the last few days, I had a peek at it through my translucent bucket at what looks like krausen until I open it up...

Apparently 3724 tends to stall but will eventually start back up.

Does look like quite the infection.

sorry i'm still new,

is that intentional (the infection), to give a sour taste?

i've had several saissons and i didn't notice any sours like in a flemish.
 
Lid with no seal and no airlock, not measuring your gravities, kegged then back to a fermenter, you're asking for an infection.

Sucks you got the infection, but experience is no excuse for being lazy with the fundamentals. Every ferment is different.
 
Looks like an accidental infection. At least, there's nothing in the 3724 that would have caused it.

What kind of "slurry" did you pitch? Same strain or something from another batch?
 
They slurry was just a repitch of the Wyeast 3724 from the cake.

And yeah, it was an accidental infection and I'm 100% to blame.

I'm just gonna ride this one out and see where it takes me.
