MY cider is in the 6 gal secondary going on week 4. Will be racking to 5 gal. Starting gravity about 1.068. Quick questions.

How long in third container?
Do you really need a fining agent (pectin/isinglass)?
Can it bottle age while carbonating or age then bottle?

Thanks.

Unless you need the 6 gallon fermenter, I would recommend just leaving it where it is.

Unless you've got a thick layer of lees (1" or more) I'd just wait till it clears on it's own. I never use clarifying agents (not counting pectic enzyme) cuz just about everything will eventually clear on it's own. If you want to age & you want to carb, I'd age it in the bottle after carbing, it's the easiest & most foolproof way to do both. Regards, GF.
