Ok. So I posted another thread about my expired Coopers and went back to the store to get different yeast. I was in a rush (someone I was with was late for work and I had to hurry!) and I ended up with Fermentis WB-06, which, when I arrive home says for wheat brewing. The brew store is a good 25 minutes away and with gas so costly, I didn't consider going back and I used the yeast in my brew this afternoon.

Is my beer going to taste funny? I used 6 lbs light malt extract with a blend of 1.5 lbs caramel and roasted grains (whatever they are, the guy at the store helped me pick out ingredients).

I'm not really picky at this point, I just want a drinkable brew. But when I hear "bananas and cloves" I think cloyingly sweet fake banana flavor with ground cloves sprinkled on them :p

Keep the temp as close to the 65-68 mark as you can and you should be fine.

+1 to keeping it mid-60's. i use wb-06 a lot, but always for wheat beers, you don't want too many of those specific flavors in your grain-bill

Our small apartment usually stays around 70 degrees these days. Is there any way to keep the temp down without cooling the whole place down? Or could I keep a closet cooler? I did try the thermometer in the closet last night to check and it was 69, so I figured it would be just as good under the kitchen table as in the closet. But maybe it would be easier to keep the closet a little cooler than the kitchen. Hm.

you could do a "swamp cooler". Place the fermenter in a container with water and put a t-shirt over the fermenter. Have a fan blowing on the fermenter. Adding ice to the water is optional but can lower the temp even more.

use a plastic tote, filled with water and the fermenter. you can also keep it cooler with frozen ice bottles. i keep a thermometer in the tote, and replace the water bottle when the water in the tote gets to 66 or so. i can also lager this way; just keep it a lot colder with more ice bottles
