Hi, if I want to speed things up, lets say I have a original gravity of 1.052 on my ale, after a week and a half I make a single reading and I have a sg of 1.012, which is 5.3 abv which is fine with me.
I decide to carbonate and then bottle but I think that maybe the gravity could have lower a little bit more but I wanted to speed up.
Could it happen that fermentation keep ocurring in bottle and form yeast trub on the bottom or that alcohol percentage rises inside the bottle? If it hasnt finished fermentation and I carb and bottle, something bad can happen? Thanks
