Searched online for an easy calculator, could'nt really find a simple free one.

I made a whiskey barrel stout from a kit years back. came out awesome and I want to try it all grain now.

Can you help me convert it and maybe show me the formula? Shooting for an OG of 1.061-1.065 and running approx 80% brew house efficiency.

Here are the fermentables.

3.3 lb. Special Dark LME
3.3 lb. Light LME
1 lb. Amber DME

6oz roasted barley
8oz Dark chocolate
8oz Caramel 90L

also, it calls for 8ox of dark chocolate in the grain bill (so assuming they are talking grain), but could it be talking about actual chocolate?

For 5.5 gallons in the fermenter with an OG of 1.063 at (a more realistic) 75% efficiency you will need:

(5.5 x 63)/0.75 = 462 points worth of various mostly malted barley grains.

Assuming 36 points per pound for the average mix of such grains gives you:

462/36 = a ballpark of ~12.83 pounds of grains required overall.

Beginning with 75% base malt this calls for:

12.83 * 0.75 ~= 9.625 lbs. Perhaps try Maris Otter Pale malt here

That leaves 12.83 - 9.63 = ~3.2 more lbs. of grains to go. Of which some of them will be:

6oz roasted barley
8oz Dark chocolate
8oz Caramel 90L

22 ounces for these yield 22/16 = 1.375 lbs.
3.2 lbs. - 1.375 lbs. = 1.825 lbs.

How about 1 lb of 40L Caramel/Crystal? That leaves only 0.825 lbs. to go.

For stout you might also want 4 oz of flaked barley and 8 ounces of lactose.

And 3 ounces of Carafa III special to make sure its black.

That should do it.

9.625 lbs. Maris Otter Pale
6oz roasted barley
8oz Dark chocolate malt
8oz Caramel/Crystal 90L
1 lb. Caramel/Crystal 40L
4 oz. flaked barley
3 oz. Carafa III Special
8 oz. Lactose (late addition, boil but no mash)

I did this completely on the fly (with little regard as to how it might turn out), but this gives you the general idea of how its done. Should get you into the ballpark at least.

There is no way to know what specific grains are in the LME's and the DME from the extract batch, so no one can attempt an exact match for those components. You can sum up their extraction points though.

37 points for each pound of LME, and 44 points for each pound of the DME.

From the shortfall of extract batch points, it looks like the extract kit was designed for 5 gallons vs. 5.5 gallons. And it was also designed for closer to 1.061 OG than 1.063 OG. Stick with 5.5 gallons as the target, and shoot for 1.063, as if brewhouse efficiency is a bit less than 75% you may still hit 1.061.

If the roasted barley, dark chocolate, and 90L Crystal were merely "steeped" for the extract batch (as opposed to a more proper partial mash procedure), their combined extraction "points" would be perhaps roughly half of what you might get from a full mash. That being the case, you might want to consider cutting them back to say 4 oz of each, and round the base malt up to 10 lbs. to keep the gravity up there,

Or you can just leave the three of them at their original quantities if you want a bit more robust Stout. Or try it both ways and see which way gives the best results,

But then again, since there are no dark malts present in the 10 lbs. of base malt, if you leave the three of them at full strength they will serve to somewhat backfill for the dark components from the LME and DME that are missing in the Maris Otter. Too many decisions,...
