Instead of flooding the forum with thousands of threads for every style out there, I say we condense it into one thread. I just can't get into sours. I tried, and I can't. I can appreciate a brett beer, and some complex vinous sours (but very very few), but not the typical "sours" that all the cool kids talk about.

Same here. I like Bretted beers or styles like Oud Bruin where the sourness is just one component balanced by other flavors, but these hardcore sours with a pH of about 1 that just blows everything else away...I don't see the complexity.

Then again, I felt similar about IPAs once upon a time, so maybe someday.

From what I understand, in order to start enjoying the hardcore IPAs, you have to develop hop-blindness (aka destroy the parts in your tongue that perceive bitterness). I believe the same is true with very spicy peppers. I really like sours, but I've always loved the hardcore sour candy since I was a kid.

So is the trick to enjoying all of the "best" things in life just to destroy your palate?

I've been exploring Belgian ales lately & last week I got one that had some pretty strong bubblegum flavor, got to admit, I'm not a fan of bubblegum flavored beer.
