I'm looking on the Allagash website at their brews and holy crap, they list the ingredients!

Looking at the grain bills though such as for St. Klippenstein, I can't imagine the grains have enough diastatic power to self convert:

Dark Chocolate Malt, Roasted Barley, Chocolate Malt, Brown Malt

Those are what are listed as the grains. Can anyone explain how they're able to mash these?
 
They must've used brown malt as the base. Since I've never had it, I can't say for sure how they used them all.
 
No, those are specialty grains so they must have also used base grains. Brown malt by some maltsters can self convert, but doesn’t have enough DP to convert others, and some brown malt has very little to no DP.
 
I was reading and it seems brown malt used to have enough power to self convert but doesn't now for the most part. Would there every be a situation where a brewery may use malts like these and then use added enzymes to get them to convert?

A grain bill with just Dark Chocolate Malt, Roasted Barley, Chocolate Malt, Brown Malt would be nasty. They just left out the 2-row.
