My beer has been fermenting for 5 days and I just found this thing floating. Looks like chewed gum, first time I've seen this.

Is it an infection?

As best I can tell you are good. Looks like yeast rafts of other stuff clumped together and floating. Depending on other stuff, it'll be on the bottom if you leave it long enough.

If not, then just use the stuff between the top and bottom.

first time I've seen this.

If you do something long enough, you'll see a lot of things for the first time.
