First what is the max og you would suggest for White Labs 320 Hefe. I have a og of 1.064.
Second what things do you do to reduce the amount of trub (hope that's the correct term) after boiling?

For your first question, are you asking for the highest gravity to ferment without a starter? It will depend on viability, which will in turn depend on manufacture date.

There is really no gravity that a yeast strain cannot handle, unless it is so high that the yeast will hit their ABV limit before their attenuation. Even still, this can be somewhat affected by conditions. The numbers listed by manufacturers are all averages.

Use a pitch rate calculator like yeastcalc.com or mrmalty.com.

For your second question, in general I don't do anything to minimize. I sometimes strain after cooling to minimize hop debris as well as hot and cold break material, but all of this will settle to the bottom of the fermenter and you can rack from above it anyway.

As far as trub I'm assuming you're talking about reducing the amount you end up racking into the fermenter?

For that there are several methods and it depends on how you transfer. Some filter through a sanitized paint bag. I've heard of some people wrapping the same type of material around the bottom of their siphon to keep from sucking it up. My auto siphon has a cap on the bottom that sits in the trub and assuming the trub layer isn't too thick it sucks from above the trub. I also start with the siphon away from the bottom and slowly lower it as I tilt my kettle to avoid as much as possible.

But even if some gets transferred it will settle out in the fermenter.

Freisste thank you for your help. I just want to make sure I'm doing everything correct. We have a lot of time invested in each brew.
m1batt1 thank you. I pumped it through a paint strainer for 5 min. I may need more time if I want to remove more.
 
Like freisste said it shouldn't effect your flavor at all the only thing trub might do is effect clarity of the beer. And if you're making a hefe they are typically hazy beers so it may not end up clear like you might expect.

Also you are welcome. Don't be afraid to ask more questions. In my experience there's something new to learn with every batch and style.
