Hi, could some someone help me to this question:
where the thermocouple(K, J or pt100) should be installed for a correct measurement in the brewing pot? Bottom or middle? My equipment have electrical resistance and I want to instal a PID to control temperature.

The temperature probe that is used to control the electric heating element should ideally be placed within about 1/4" (6mm) of the heating element, but should not touch the element. You want to control how hot the hottest wort in the system gets in order to avoid scorching, or denaturing enzymes during the mash. If you are worried about the temp being lower elsewhere, then you should add an additional temperature probe and display, so that you can monitor temperature differentials within your system.
