Not really. I think that some of the oils are modified in some way. My experience has been that most of my Witbiers have pretty good head, depending on the type of wheat I use. My last batch seems to have less head though. I used less flaked wheat and more white wheat.
Never had an issue. In a typical witbier or other beers where one would use them, there are plenty of heading proteins in the grainbill, especially wheat.
