Can I use this yeast?

I harvested a pacman from an esb I made back in January. I harvested it on January 8th, washed it, and stuck it in the fridge (fully sanitized jar). It layered up beautifully and looks good. But can I wash it one more time and build a starter for this? What do you guys think?

Absolutely. I would have suggested washing it to get the yeast off the trub layer so you've got a good plan.

No need to wash it again. Just pour off the liquid and use it in a starter.
