Can I do this or do I have to mix the grains I was thinking

6.6 lbs Munich lme
2 1/2 lbs dark dme
2 lbs plain wheat dme

3/4 crystal 60L

1 oz centennial 35 min
1 oz us hallertauer 25 min

Then add peach extract on secondary

You can do that. It's hard to pick grains (and other extracts) when using dark extract, though. It's because there is already crystal malt in the dark extract- but maybe other malts like Munich malt also. So there is a risk of the beer being too sweet or cloyingly "thick" when using dark extract. I'd ditch the dark extract, use light extract, and use the crystal 60L.
