i know irish stout shouldn't be fizzy, but i wondered if i add a small valve of gas it might give it a bit more life, i made coopers irish stout with 1kg of dark spray malt and a tin of lyle's black treacle. any advice would be greatly appreciated.

Carb it up and pour it violently to knock out the CO2. I also read that having the glass cooler than the beer "helps" knock it out, that should give you a nice head and keep the fizziness at bay.

Is this a dry or sweet stout?? Carbonation level would be determined by style. Use this tool to figure out how to carbonate it, and to what level/volumes.

I've not made a stout yet, but you still want carbonation in there for head formation and such. You push with nitrogen/beer gas in order to get the cascade effect. Otherwise you can use CO2 and a creamer faucet (or regular one) to go to glass.

Agree that you'll want to carbonate to style.

Properly chilling the beer and using very cold glasses won't knock out the CO2, but will help keep it in solution so you won't be "fizzy".
