I'm making a kit of Strawberry white Merlot from an Island Breeze kit. I added some peach nectar to the must, but it didn't produce much peach flavor. I'm a couple of days from fining and would like to know if I could add a peach flavoring I bought for bottled water to bump up the peach note. it contains; propylene glycol, water, polysorbate 80 and artificial flavors. I read somewhere that certain ingredients in juices off the shelf would inhibit wine or produce off tastes. Does anyone know if this would be okay to add at fining?

my guess is the polysorbate is going to have a similar effect as potassium sorbate.
So as long as you add it once fermentation is over, it shouldn't mess stuff up.
