Hello everyone
Hope you are all good
Last kit I brewed was a Belgian saison kit. The yeast packet stated temp from 79f to 89 f.
Even though the room temps are 68 f and the fermentation temp shows 72f
What if anything will happen ?

It will ferment faster and produce more saison-like esters at the higher temperatures. It’s a French saison strain so it’s not likely to stall. At low temperatures you may not get as interesting flavors as you would with the recommended temperature range.

It will be cleaner in flavours, and likely miss some "saison" notes, but as long as it started okay, it shouldn't stall at those temperatures.

Thanks guys
Tonight marks the first week and fermentation is starting to slow
When i look at the temp with a flashlight it looks already clear more then any other brews I have done
And it smells when the fermenter burps fantastic
I think based on these things it will be a good one
I did order a waterbed heater so my second kit will be kept at the recommend temps
Should make a interesting comparison

That might explain my last saison...
