hello.

on my continuing hoppy session pale ale quest.

i am looking for a good ale recipe using at least 4-5 ounces of mosaic. i have a pound that i want to cut into.

i have a few ounces of galaxy strata centennial cascade and citra i can add.

does anyone have a good mosaic recipe that they have done.


i was thinking maybe .5 ounces of cascade to bitter at 60
then an ounce of mosaic at 10 , 2 at flameout then an ounce or 2 dry hop.

i was thinking of throwing in another ounce or 2 of citra somewhere in there

thanks for any suggestions
 
I have never brewed one although I have been meaning to get around to doing a fairly hoppy mosaic SMaSH for a while now. Maybe this week unless I decide to do the citra SMaSH first. I really liked this when I visited the brewery last year. Seems like it would be fairly straightforward to approximate the recipe from what they tell us on the website, but their pale malt must not be all that pale if they're getting to 11 SRM with just that and white wheat.
 
I did a single hop brew not too long ago with Mosaic in it. It was based on More Beer's single hop recipe kits and scaled to a half batch. Pretty much:

93% Pale malt
7% Crystal 15L (I used Carapils, since I didn't have any C15)
Mash at 152F

Bittering charge of 24 IBUs at 30min
2oz of Mosaic at flameout

Pitched a pack of US-05 at 67F for about 2 weeks.
Pressure fermented at 15psi

2oz of Mosaic dry hopped. I dry hopped in the keg at high krausen.

It was very light in color and had lots of aroma. Not a medal winner by any means, but I liked it. I may try the other recipes listed next time I use Mosaic.
 
There's a BrewFather recipe called Hazy Citra/Mosaic that looks inviting. Never brewed a NEIPA cuz I am not a big fan of the style, but the recipe looks good and uses a ton of mosaic.
 
Of course. You want to be blown away from simplicity?

Mosaic all the way.
Maris Otter all the way.
Chico or Nottingham (your preference) - I prefer the chico, but have been hating US-05 recently.


100% Maris Otter around 1.050 OG
hit 30-40 ibu
focus on whirlpool and dryhop. If you don't want to whirlpool that is fine, you can just do slightly more in the later additions, you can scale the other additions or move them back slightly E.G 30 min, 15 min, 5 min, FO

This will give you a wonderful Maris Otter Mosaic Pale Ale (MoMo)
Water profile of your choosing if you want to choose a balanced profile that is fine.

I've done a few Mosaic SMaSH pale ales before. I remember I did one in 2016 that was 100% Maris Otter, with Mosaic used for bittering, aroma, flavor, flame out, and dry hopping (I believe this was back when I very rarely ever did whirlpool hops) with 5.7% ABV and 36 IBUs.
