So in my newest adventure in brewing I decided my first AG would be a KISS American Wheat, I have already gone through and found places to improve efficiency (55-58%) 1st go round... but it seems i only got 4gal from the boil and 3.5gal at bottling time.

My question is with the following hop schedule, originally designed for 5gal, what happens if the batch only yielded 3.5gal?

FWH: 0.5oz Mt. Hood 3.8%
75 minute boil
60 min 0.5oz Mt. Hood 3.8%
15min 0.5oz Mt. Hood 3.8%
15min 0.5oz Hallertauer 5.5%
5min 0.5oz Hallertauer 5.5%
5min 0.5oz Mt. Hood 3.8%

Any ideas or what to expect from this batch would be awesome, it sat in primary/secondary for a month, bottled last night.

Thanks

What was your starting boil volume and volume into the fermenter? Yield into bottle won't affect it so much because you're loss there is from Trub and hop absorption. It the volume you started the boil with and got into fermenter that will determine IBU's from your hop schedule.

The pre-boil volume was ~5.5 gallons, and the amount into the fermenter was around 4gallons.

aside: You know where i can find a reliable online calculator? i'm having trouble with hopville at the moment.

Didn't you taste your gravity sample at bottling time?

Yea, REALLY hoppy... i think it will all age out right, it was just surprising to taste. I was just wondering what the science behind it might be or a boil volume to IBU calculator to find the actual bitterness compared to what i was originally shooting for.

FYI at hopville you have to set the boil volume in order for the IBU calculations to work out. I didn't know that for a while and was wondering why it was giving me some wierd numbers.

update. beer has mellowed out great. real hop flavor without a cloying bitterness. the FWH really worked out for the better. the beer came out different than i originally intended, but still came out better than commercial.

I was about to say (luckily I read all the way through) that after you bottle and let it sit for a month or so, the flavor will mellow out. For instance, a lemon/orange zest wheat beer I brewed was slapping me in the face with citrus when I bottled. 3-4 weeks later, amazing flavor. I try to always remind myself to mellow out too when bottling.:D
