Hey ya'll, been on this form for a few years but only ever been in the mead section.
I was looking into getting a kombucha starter kit for my brother and his family, as they all drink it like crazy.. but it occurred to me that with him having younger kids, ABV is rather important.
Im curious if home brew is similar abv to store-bought stuff, or is there something you do to reduce the alcohol content? At first I thought just boil it off but that would also kill the good bacteria..

Since some of the bacteria that create the vinegar/lacto flavors "eat" alcohol, the alcohol level is very low if allowed to ferment to that point; BUT just like with any homemade beverage that uses yeast (including root beer), there is some alcohol likely still there. The question is how much, and there really isn't a good way to tell without testing in a lab.
I can say that mine is crisp and bright and tart, and I let my grandsons drink it but they don't like it all that much so the amount for them is negligible.
