I'm doing my second all grain brew and wanted to get some input on my recipe. I'm trying to get a sweet maltier version of a wit beer. I'm really wondering if my proportions are right, if the honey malt is enough to come through slightly and what you think about my hop selection.

Any help would be very appreciated.

Original Gravity: 1.047 (1.044 - 1.052)
Terminal Gravity: 1.012 (1.008 - 1.012)
Color: 3.93 (2.0 - 4.0)
Alcohol: 4.62% (4.5% - 5.5%)
Bitterness: 13.0 (10.0 - 20.0)

Ingredients:
4.25*lb (46.7%) Belgian Pils - added during mash
3*lb (33.0%) White Wheat Malt - added during mash
1.0*lb (11.0%) Wheat Flaked - added during mash
.1*lb (1.1%) Honey Malt - added during mash
.25*lb (2.7%) White Table Sugar (Sucrose) - added during mash
0.5*lb (5.5%) Rice Hulls - added during mash
1.0*ea White Labs WLP410 Belgian Wit II Ale
.33*oz Corriander crushed - added during boil
.33*oz Orange Peel (dried) - added during boil
1.0*oz Vanilla (whole bean) - added during boil
.75*oz (60.0%) Czech Saaz (5.0%) - added during boil, boiled 30.0*m
.25*oz (20.0%) Hallertau (4.5%) - added during boil, boiled 15.0*m
0.25*oz (20.0%) Hallertau (4.5%) - added during boil, boiled 5.0*m
 
I would back down on that honey malt as its very strong. I would go for around 1/4 lb. take away that table sugar and mash at a higher temp to bring out the sweetness your looking for. I would mash around 152-154 for 60 minutes. I would also do a 15-20 min protein rest at around 122 to get a little more out of that wheat to start. I know some guys will disagree with the protein rest but its just something I'm used to doing when I use wheat.
 
Thanks for the reply! I actually only used .1 lb in the recipe. Still think its to much? I can't use to much more than that with what I have right now otherwise it would throw the color way out of proportion. What do you think about the hops and other parts of the brew?

To be honest I never brewed a wit so I can't really comment on the adjuncts. As far as you grist and hops go, it looks to be balanced and should work.

One more thing, don't worry to much about your color. Obviously do t brew a 20srm wheat, but if you like that honey flavor go ahead and push that srm up to accomplish your taste needs. If your only off a few points most people won't even notice it. I do the same thing as well though, always want a perfect looking beer!
