That coffee stout was nice... My mom lived there until she was like 2, wonder if they might know her.
Edit: NVM, going simcoe, columbus and centennial. Thanks for the help.![]()
Trying to mock up my red pale ale recipe. Want something that isnt too fruity or citrusy. Looking at simcoe but not sure what else to use. Challenger isnt available at ritebrew otherwise id add that. Any suggestions? I'm looking for more of a piney forward pale, nothing too crazy pine though. I do have Columbus on hand which I thought I could use to balance it out a little.

Funny, that's what I was going to suggest. I really enjoy Columbus in a red beer.
Extra special blend this morning. Just mashed in. Drinking what I'm brewing.
I'd go Centiennial, Columbus, and Simcoe. Looks better in order.
I actually started thinking about what west coast beers were sort of like what I was looking for and Pliney popped in my head. Those are the three hops listed in the clone recipe here so I was sold haha.
Uh, good thinking!
Here's the recipe. Just ordered a bag of Best Maltz Red X to do some experimenting with. Doing this pale, probably a saison, an IPA, and hopefully have enough for a sour as well.

Using 1056 to get a clean malt/hop profile. Any suggestions? Maybe more centennial at flameout?
Sorry, I have a small touch of OCD.
You don't temp me. Lol. We shouldn't even joke about it because we will end up pulling the trigger.
I just went on a Tilquin acquisition spree...
