I pitched WLP833, a ton of it probably. Two vials in a 1 liter starter, and when I ran that through mrmalty and it said it wouldn't be enough I bought another vial, decanted the first starter and added another liter of fresh wort and the new vial. So effectively it was 3 vials in two 1 liter starter steps. I pitched while the second step was at high krausen.

Funny you mention that. I brought in some beers for the brewers after they requested to try my sours but quickly learned most of them had brett which they do not like in the brewery. Drank one and i had to take everything off premise. Plant manager now jokes with me that i need to take a chemical bath every time i come to work, just to be safe. I assured them i sanitize my beard every morning though.


Water and ibuprofen. Got a little crazy in the ville last night.

It's fun. It can also be used as a backup in case HBT crashes again. My feed was blowing up that day, let me tell you
 
Guys, is it conceivable for a beer to drop from 1.060 to 1.050 in the first 8 hrs? If so, would me hitting it with 02 at this point be detrimental?

Definitely possible. If that has indeed happened (measures are assumed to be accurate), I think adding oxygen now would be a bad idea.

First time I've had it. I enjoyed it. Don't drink saisons very often (that was my second commercial ever). I'm not going to try and describe much flavors now sober as I am completely rubbish at doing that. Peppery I think.

I also bought a big Belgian quad from Costco. (Something with cherries and barrel in the name ETA: Smokestack). Thank feck I didn't crack that one open too last night. Next Fri/Sat I'll have a go at it.

Tanks 7 is one of my favorites. Absolutely love that beer. Was the quad BBQ? If so, that beer is also fantastic


Sample of my sour wit before racking to secondary. Pretty nice after only about 40 days. Nice slight yet pretty tart acidity to it and good funk from all the wheat. Cant wait to revisit this guy in six months!

Smokestack is a series.

What you have is Bourbon Barrel Quad, usually referred to as BBQ.
 
Question for all you sours brewers. I think i have six gallons to rack of this sour wit to a six gallon carboy but its hard to tell if i really have that much. I really don't wanna end up with a half gallon of head space if i dont have quite six gallons. Anybody out there have success with long term sour aging with this much headspace? My initial thoughts are dont do it but wanted to check your experiences first. I really hate dumping an extra gallon if i end up using a five gallon carboy.

First off, blow me. Secondly, I nearly always buy my grains milled and that is an "in case I need it mill". Thirdly, it does ok if you remove the handle and attach a drill. Fourthly, you have no evidence that I'm not in Tiger paint (pitchers and catchers did report this week). And, lastly, blow me...

Improvement on my back, makes me happy. Over-worked it a bit trying to vacuum and walking around with a flooring guy to discuss some projects I have to get done. But much improvement over the past few days and a huge sigh of relief right now, even if there's still pain. Thinking I may venture out on my own to the market later. I wish I could ride my motorbike though. I'm thinking it's a bad idea to try.
 
He may science well but he cant craft beer all that great. What a noob! :mug:

They had a some other ones from the series(?) A Rye Rye was one I saw.

HB pipeline is depleted so will be buying more beer in the coming weeks till the larder is restocked.

Rye on rye is also fantastic. Its a good thing you didnt have that quad last night. You would have really been hurting today haha.

It probably would be a bad idea, don't push too hard especially if you have drugs dulling the pain.
