First Batch of Mead (Cherry Question)

Hello! I'm Ben and about to make my first batch of Mead. I'm following Schramm's recipe from his book "The Compleat Meadmaker" and doing the Oblascinka Cherry Riesling Pyment. I know I can't get those cherries but my wallet is trying to find a way to get tart cherries at an affordable price...

First of all, telling that I am making 5 litres of mead, using 1.9 kg of honey and safale S-05 as yeast, so it achieves 12% aprox. It has been already one month since it started, so I...

Hey all long time reader first time posting, I’ve been making wine and beer for about 3 years now and spirits for about 2 and I e been a chef for 13 years. I just got a hold of 10kilos of pasturized honey for free from the restaurant and thought I would try to make mead. However I’m not sure...

How do I flavour my mead?

IImade my first ever batch of mead and I wanted to give my mead an interesting, kind of smokey/woody taste, and I was wondering if adding some charred Oak in a cheesecloth would be enough or whether I actually have to age it in a barrel. Problem is I'm strapped for cash so I wanted to know if...

    Medium show mead

Hey folks used a wine pump and head space eliminator on a med show mead and I don't think anything got in my fermenter. That being said I have a film on top of the mead that I believe might just be yeast floating on the surface but I was curious if anyone else thought otherwise. Also has anyone...

Did I measure the honey correctly?

Hi all, After figuring out our preferred honey mixture (2/3 random dark honey, 1/3 buckwheat honey) I resolved to make three gallons. Whenever I up a recipe, I worry that I'm going to forget to multiply one of the ingredients properly. This is Bray's 3-day mead I'm talking about. When I...

    Metabisulphate

In brewing I use metabisulphate as campden tablets to remove chlorine/chloramine from the water. I know in beer that the boil removes the leftover sulphates. I am about to make my first mead and wanted to do the same but do not know how long I need to boil to do so. Any help appreciated thank you!

    Help with high gravity Mead

Hello all, hope you like my story, the question is at the end: I need some direction and advice, this is my 2nd batch of brewing ever. My first batch was a ~5gallon beer, turned out yummy. Now I was pressed by time to brew a wine from grapes I grew myself, so I thought since I only got about...

Slime like substance rising from the sediment at the bottom. Is this an infection?

I have some strange slime like substance in my homebrew mead that sometimes rises from the yeast sediment at the bottom. Sometimes, the slime brings some of the sediment up with it and some of the slime stays at the top. Is this an infection or anything else I should worry about? Would my mead...

    Youthberry Tea Mead

Pictures here: This is an experimental recipe I tried out last month. I'm still pretty new to meadmaking so feel free to give me any advice on how to improve this recipe. I must say, out of the few recipes I've made so far, this is my favorite. I made a mistake while bottling so there is a...

    Acerglyn

This is my first go at an acerglyn, and I was wondering if anyone had any thoughts. I thought it would be fun to do kind of a sweet/savory thing. Instead of using water, I'm using Cold Brew Coffee. I want to get kind of a breakfast feel, so I'm doing the coffee, some black pepper corns, some...

    Is my mead still good?

Hi Everyone, I made up a five gallon batch of mead with blueberry and vanilla about 25 months. That's right, 25 months! I racked it once off the sediment, and it has been sitting in my basement with a airlock for all this time. I have tried to add liquid to the airlock consistently, but it has...

    K-Meta at Bottling Questions

Hi Everybody, I understand that adding Potassium Metabisulfite at bottling will help with anti-oxidation and preserving your wine longer. I have some questions related to this: 1) It seems counter-intuitive to add K-Meta to my carboy then bottle immediately. Wouldn't that cause a build-up of...

Is this something to worry about - floaters/pellicle on top of mead.

I made a mead, used 15lb of wildflower honey. I am not sure if it's pasteurized, it probably is, but it didn't say anything about it on the label. I didn't boil or heated the must. Used D47 yeast plus tosna nutrient additions. The mead fermented for about 1 1/2 month and is pretty dry, tastes...
