I'm looking at a Samiclaus that was brewed in 2012 and bottled in 2013. I'm thinking it might be time to drink it. Or should I wait?

I try to keep mine at 50, but it does get up to low 60s in the summer.

Drinking nothing now, but in 10 min I'll be in there.

Maybe I will keep in the fridge, in a state of cat like readiness for when I am to drink.

If anything it is good food, good coffee & I get to reassure myself I have no issue with alcohol!

True that. Congrats to your uncle. I deal with people all day long at work with various degrees of substance abuse issues that's one disease I hope I never have to fight. I know having a supportive family helps.
