Im experimenting with making a cider using Weihenstephan wheat yeast (Wyeast 3068). My recipe is below:
5 gallons Mott's organic cider (sg 1.050)
1/2 tsp Yeast nutrient
2.5 tsp pectic enzyme
Wyeast Weihenstephan Wheat (3068) yeast
Starting gravity was 1.046 (~6% potential abv)
I had good airlock activity for the first weeks. At the one month mark, bubbles were ~ 1.5 minutes apart. I just racked to secondary (at the 6 week mark, now), and the gravity is only at ~1.022 (meaning that the abv at present is around 2-3%). Why is the still so much sugar left? Seems like the tolerance for this yeast was around 10% so I dont know why it seems to be going so slowly/stalled out?
Anyone else tried this yeast with cider? I added another 1/2 tsp of yeast nutrients, and topped off secondary with a pint of boiled apfelwein. I guess Ill just let it go and see what happens. My yeast nutrient is a little old - could this be whats slowing things down? Any advice?
I will say, when I tasted it (aside from still being too sweet for my liking) the flavor was great! Has some of those banana/clove notes that I was hoping to get out of this yeast. Tastes crazy!
