Just watched this video about brewing a 100% malted wheat ale from last April. Thought y'all might find it interesting?...

Im not too surprised at the lack of rice hulls, especially since it was a BIAB batch with a protein rest.

I do BIAB, & have gotten some thick mashes trying to cram 8 1/2lbs of malt in a 5G kettle with 2 1/2G of water. But never did all wheat.

i've had a 100% wheat beer before, was good stuff... i want to try it one day, but too much else on the docket.

I did a Grodziskie this year which is 100% smoked wheat in a 3-vessel herms. No problems, although I did use a ton of rice hulls. Beer turned out great.

Cool vid. Just wondering --- is the protein rest before mashing only because it's a 100% wheat beer, or would some degree of rest (say 10 min?) benefit a typical 50% wheat-malt brew?
