Don't know if this has been covered but I couldn't find it. I usually alway take one peak during fermentation. I brewed a brown ale all grain BIAB. The smell coming from the fermenter burned my nose. Any ideas what's going on?
 
+1. Burned my nose hardcore on my last starter. Twice. Slow learner, I guess...

It is a good way to determine if the starter is done.
 
Correct me if I'm wrong I'm certainly still a noob here, isn't that a by product of fermentation? That should fade with time in the fermenter correct? Or I hope?

When fermentation ends there will be less CO2 produced therefor less nose burning. Try to avoid disturbing the gas blanket until racking or you risk oxidation.
